Cherry Time!

It’s cherry time!
Cherries are one of my favourite fruit.. I’d love to eat this fresh, firm,  juicy fruit all year round but unfortunately they’re only in season now. I usually  buy my cherries in Brendola a small attractive town tucked away in the Berici Hills.

Some news about Brendola:
Brendola is situated at about 8 miles south west of Vicenza in a privileged position, embraced by the green Berici Hills.
On Mount Comunale, overlooking the town, is situated the beautiful 18 holes golf course “Colli Berici” from where one can enjoy the views of the surrounding countryside  and  the Venetian pre-alps. Road cycling and mountain  biking  are  very popular in this part of Vicenza.  The area is blessed with  really exceptional scenery, so  when I want  to  get  away from the hustle and bustle  of  the   city I come here  to  cycle  or just  to walk around  in the  countryside  listening  to  the  sounds  of nature.  I always feel a lot better after a  long walk!

I recently tasted a dessert made with cherries  cooked in red wine. With the approaching  of  summer I always  have ice cream  in the fridge  so  these  “boozy cherries” are  going  to  be  perfect as  a  topping  for  vanilla  ice  cream!
Here’s  the  recipe:
Wash and pit  a  kilo  of  cherries.  Bring  to  a  boil  7dl  of  red  wine  with  3  tablespoons  of sugar.  Add  the  cherries  and  cook   for  4  minutes.  Remove  the  cherries   with  the  aid  of  a skimmer  and set  them  aside.  Continue  cooking  until  the  liquid  has  reduced  to  1/3, becoming  syrupy.  Remove  the  syrup  from  the  heat  and  add  the  cherries.  Let  cool  and  then  serve  alone  or accompanied  with  ice  cream.  You can also make the syrup a little spicy by adding half a teaspoon of cinnamon  and three cloves while cooking.
